Recipe: Herbed Summer Squash and Potato Torte

I added a tomato and red onion. Will thought the thyme was a little much, but I thought it was perfection. I put the whole recipe into a 10-inch pan, it fit just fine. The potatoes were a little underdone, if you go for a big pan, up the covered cook time to an hour.

We will definitely be making this again!
